Elderflower champagne – They flower from the start of June
- 3-5 large heads of elderflowers*
- 1lb sugar
- 1 gallon of water (cold)
- 1 lemon
- 1 tbs white vinegar
*flowers rather than stalks which can taste bitter
- Put lemon juice and all other ingredients into a bucket
- Leave for 24 hours.
- Strain & bottle.
- Drink after 2 weeks.
